Marmalade Cake

Made with our favourite best-selling marmalade – Granny’s!

Set the oven at 180°c. Line a cake tin with a dollop of butter or use grease proof paper.

Put 175g of butter and 175g of golden caster sugar in a bowl and beat until pale and fluffy.

Break the eggs into a small bowl and beat them lightly. Pour the beaten eggs in with the butter and sugar mixture, a little at a time. Beat in 75g of Granny Marmalade’s Three fruit Marmalade and the grated zest from 1 large orange.

Fold in 175g of self-raising flour until it is all mixed in. Gently stir in the juice of half of the orange.

Spoon the mixture into the lined tin and then bake for approximately 35-40 minutes. Leave to cool in the tin. Once cooled, remove from the tin and place on a wire rack.

For the Icing: Using the juice from the other half of the orange mix with 100g of icing sugar to make a slightly runny consistency. Drizzle the icing over the cake, letting it run down the sides and leave to set.
